It's been 3 months since my last post and I've had a bunch of emails from concerned friends because I have not been present on my blog. I'm here to say all is well and I've just been taking time to be with my family. I spent a year building the blog and my Etsy site and looked around me and my kids were a year older. I'm just soaking up every sticky kiss, snuggle and park date! My children are THE number one most important thing to me so from time to time I may decide to take a break from blogging and that is just what I'm doing now. I am still very active on ETSY and am available for party printable packages to those interested. I'm sure you all understand and I appreciate the kind regards and concerns. Our little Graham turned two (sob) and when planning his party I gave him a few choices. I asked him if he wanted a 'balls and bubbles' party or an 'airplane' party (both themes are absolute LOVES of our little one) and as you can see he chose "pairplanes" as he calls them. I know it's a controversial topic--
do I reward my child with prizes/food/candy for going to the bathroom or
not? Well... this mom is desperate and will try anything! Plus, <a href="http://www.babycenter.com/404_should-we-offer-rewards-or-bribes-to-encourage-our-child-to_10954.bc">this article at babycenter</a>
made me feel a bit better about the idea of the reward system. We've
tried potty training numerous times and numerous times have realized we
were not ready yet. Now at 3 years and 4 months I feel as though I can
rationalize on some small level with my child about using the
potty. SO... we're in full training mode. I'm hoping the potty
prize bag and chart will motivate and encourage my little one (or little
ones-- if my almost 2 year old potty trains at the same time I wouldn't
mine). I'm hoping to use the <a href="http://www.babycenter.com/0_potty-training-in-three-days-or-less_10310078.bc">"3 day lock-down method"</a>. The idea is to hunker down in our house for a few days and
drink lots of water/juice. </div>

Once we've got this thing down I thought a little long term reward might help keep the momentum going. If my little one is accident free for nine days we plan to reward him with some Coldstone yumminess or miniature golfing or whatever his little heart desires (within reason)! I know I always appreciate homemade gifts, especially on Mother's Day, so this year I decided to do baskets for the moms with multiple homemade goodies. First fill your jar with the sugar, but leave enough room for the oil. I used just enough oil that when it was mixed together it was a sloshy, but not too oily (does that make sense?). It's not a science-- just pour the oil in a little at a time until you're satisfied with the dampness of the sugar mixture.</div>

Now, add between 5-10 drops of essential oil. I used lavender, but contemplated using peppermint, orange, vanilla....etc. I bought this lavender essential oil at Hobby Lobby and it was the most costly part of this project. BUT, it should last me a while because you don't need much.</div>

Every time we return to Utah we make multiple trips to get our fix, but this recipe suffices our cravings while we're away and it's super quick to make. I love the mixed texture of the creamy sauce and crunchy crumbs. Hope you enjoy my take on the Corner Bakery dish-- we sure do.</div><div class="separator" style="clear: both; color: #b45f06; text-align: left;"><span style="font-size: x-large;"><u>Creamy Pesto Sauce Directions (serves 4-6):</u></span><span style="font-size: large;"> <span style="color: black;">While the noodles are boiling, place one container of Buitoni alfredo sauce with 4-5 tablespoons of pesto in a sauce pan over low to medium heat, stir often to make sure it doesn't scorch on the bottom. After the noodles are cooked and drained add the sauce and mix until pasta is evenly coated. Next, top with toasted breadcrumbs and serve immediately. Oh and don't forget to salt to taste. Every pesto sauce has a different level of sodium so I usually wait until the end to salt.</span></span></div><div class="separator" style="clear: both; color: #b45f06; text-align: left;"><span style="font-size: x-large;"><u><span style="color: #b45f06;">Toasted Breadcrumbs Directions:</span></u> </span><span style="color: black; font-size: large;">Melt two tablespoons of butter over medium heat in a small saute' pan. <div style="color: orange; text-align: left;"><u><span style="font-size: x-large;">Royal Icing (Piping Border Frosting)</span></u></div><div style="text-align: left;">2 Egg Whites, beaten</div><div style="text-align: left;">1/4 Teaspoon Cream of Tartar</div><div style="text-align: left;">3 Cups Confectioner Sugar </div><div style="text-align: left;">Directions: Sift together the sugar and cream of tartar. Next add the egg whites and beat with electric mixer until it stiffens up and holds it shape. Then, I divide the frosting into different bowls and add the coloring needed for each cookie. Keep in mind that piping the borders on the cookies don't take a whole lot of frosting. </div><div style="color: orange; text-align: left;"><span style="font-size: x-large;"><u>Royal Icing (Flooding Inside Frosting)</u></span></div><div style="text-align: left;">Using the left over piping border frosting I then added just enough lemon juice to make the frosting a bit more runny. I believe I added somewhere around 1-2 Tablespoons. Then, you just plop a good amount in the center of the border frosting and slowly spread it to the edges. Leave a bit of room for the sewing machine foot. If the candy is butted right up to the edge the sewing machine foot ripped my paper because it was too tight of a fit. The kids enjoy threading their fruit loops onto their string. I love watching their concentrated faces as they try their hardest to bead their cereal. Then, we tie knots in the end and wear them as necklaces. It's kind of nice, really. They have snacks on the go and I don't have to worry about them spilling all over the ground and getting crunched into the carpet. Plus, stringing the cereal helps their chubby little fingers to develop manual dexterity and hand-eye coordination. Which reminds me-- I need to make a trip to the Good Will. Anyway, Miles and Graham are mad for blanket rides. Usually toys, balls, and snacks accompany them on these rides. Typically following these rides is the request to be burrito-ized! I swaddle them tightly and they giggle and wiggle their way out and then we do it all over again. The puzzle sticks were a super quick craft and was achieved in one afternoon's nap time. I used jumbo popsicle sticks and these pictures were cropped and sized just right for them. Not to mention it made me break out my brand new serger, that has been sitting in the box over a year now. I don't know why, but just the thought of serging fabrics intimidated me. While the oven is heating up mix together the cake mix, oil and eggs. Next, using a rounded tablespoon scoop the dough onto your cookie sheet-- leave a couple of inches between the cookies. Bake for 8-10 minutes. Let cool completely on rack before assembling.<br />
While cookies are baking beat together your cream cheese, butter, vanilla and almond extract with powder sugar. Add small increments of the almond extract at a time. I love the cherry flavoring it gives baked goods, but depending on how much you like the taste of almond extract you could add a little more or a little less (or omit it all together, but then it would be called a 'strawberry vanilla whoopie pie'). When assembling the cookies I use that same tablespoon and plop a good amount on one side and take the other cookie and close it up, pushing the frosting out the sides.<br />
<span style="color: #ea9999; font-size: x-large;">TIP</span><span style="color: #ea9999;"><span style="font-size: x-large;">--</span> </span>don't push the cookies together too hard or the filling will spill out. Also, these cookies are much easier to eat after they have sat for an hour or two assembled.
